I love s’mores! My highlight of camping out or going to camp has always been the promise of s’mores. I don’t even like marshmallows but I guess loving two out of three ingredients makes up for it.

According to Wikipedia, a s’more (sometimes spelled smore) is a traditional nighttime campfire treat popular in the United States and Canada consisting of a roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker. S’more is short for some more. It’s like potato chips, who can just eat one?

While the origin of the dessert is unclear, the first recorded version of the recipe can be found in the 1927 publication Tramping and Trailing with the Girl Scouts. Those sweet-tooth-loving Girl Scouts — first came the s’mores than the cookies.

Here’s a blog with a spin on the traditional s’more. While I don’t think s’mores have to be improved one bit, these photos look good enough to eat.

What can make or break a s’more is how the marshmallow is toasted. If it’s not toasted enough, the chocolate won’t melt and if the marshmallow is too charred, it tastes burnt. I haven’t tried s’mores with bittersweet chocolate but that might make for a more sophisticated taste vs. the traditional milk chocolate. Or if you’re totally not a purist, substitute a peanut butter cup for the chocolate.

And if you’re so inclined and truly ambitious, you can make your own marshmallows.
