It’s that time of the year — Hot Cocoa time. Who doesn’t like hot cocoa? That’s what I thought, nobody. The KRUPS people sent me some ideas for hot cocoa and they were so enticing, I thought I would share. You can use your favorite hot cocoa recipe. Most boxes of cocoa powder have recipes or if you are super lazy, buy the pre-made mix. Whipped cream optional.

Marshmallows: While marshmallows are a standard choice for any cup of hot cocoa, mix it up by toasting those mini marshmallows over a fire before dropping them in.

Espresso: For the caffeine enthusiast. If you need a little boost, morning or night, brew some rich espresso and add it to your hot cocoa for some extra motivation.

Orange Zest: If you prefer fresh, citrus flavors, add an orange rind or zest to achieve a spicy, fruity flavor.

Ice Cream: For the ULTIMATE celebration, add a scoop of your favorite ice cream. To make it extra special for the kids, add a dollop of whipped cream and a cherry on top.

Frangelico: Chocolate and hazelnut is a delectable combo. If you love hazelnut, add Frangelico. Remember adults only! And if you want even more flavor, crush hazelnuts for a crunchy topping!

Cinnamon Stick and Chili Pepper: For a kick that will really get you off your rocker, add a cinnamon stick with a dash of chili powder.

Peppermint Stick: If you absolutely must keep it classic, this is the way to go. For the adults in the home, substitute peppermint schnapps for some fun! Add a mint leaf for a fresh taste.

I have chosen the month of December to restrict my carbs. A little self control was needed to step in quickly. However, I still wanted my hot cocoa as the temps are dropping here in Tucson.  Cocoa powder has no sugar; chocolate powder or chocolate drink mix does. Cocoa powder has a richer taste.

Karyn’s low carb hot chocolate

your favorite mug
2/3 cup hot water (in microwave)
1 tablespoon cocoa powder (not chocolate powder) which as 2 grams of carbohydrates or less (no sugar added)
artificial sweetener to taste
1/3 cup unsweetened coconut milk, lightly heated

Take your favorite mug and add 2/3 cup hot water. Heat in microwave until hot but not boiling. Add the cocoa powder and artificial sweetener (1/2 packet or 1 tsp). Stir until smooth. Add the coconut milk. Stir again.

Move to the couch and relax with some jazzy music and your favorite pet in your lap.
